The compound called oleocanthal in olive oil is known to have anti-inflammatory benefits. In fact, it is known to be similar to the effects of ibuprofen. Oleocanthal is a polyphenol, or an antioxidant, that occurs naturally in olives. Polyphenols are antioxidants and they help your cells fight off damage from aging, toxins in your environment, and processed chemicals found after breaking down your food. That being said, it is important to limit the amount of toxins that enter your body in the first place.
