Ingredients
5 boiled eggs, peeled and chopped
1/4 cup finely chopped capers
3 tablespoons finely chopped red onion
A large handful of fresh parsley, chopped
2–3 tablespoons traditional yellow mustard (or Dijon for a deeper flavor)
2 tablespoons mayonnaise
